The default account used as the Pay from Account in the Pay Bills window comes from Setup>>Linked Accounts>>Purchases - Bank Account for Paying Bills.
If you are needing another account selected, you would need to update that Linked Account. This will only affect transactions going forward, previous transactions will still have the original account on them.Do let us know how you get on and if you require further assistance.
